天然食用色素藻胆蛋白毒理学安全性评价研究

A Study of Toxicology of the Natural Edible Phycobiliprotein on the Evaluation of its Safety

摘要: 对新型天然食用色素藻胆蛋白进行了大、小鼠经口LD50,骨髓微核试验,睾丸精母细胞染色体畸变分析、Ames试验及离乳大鼠30天喂养试验,证明该色素急性毒性很小,Ames试验、小鼠骨髓微核试验和睾丸染色体畸变分析在实验组与对照组间均未见有统计学显著性差异,未发现有致突性。表明藻胆蛋白是一种安全,有发展前途的天然食用色素。

Abstract: Phycobiliprotein, which is a new natural edible pigment extracted from fresh laver. In order to insure the safety of food, we carried out LD50 of rats and mice per oral, micronucleus test in mice bone marrow, analy-sis of spermatocyte chromosome aberration in mice testes, Ames test, and 30-day feeding test was performed on weanling wistar rats. The re-sults showed that the acute toxicity of the pigment were very low. No statistical significant difference was detected in the Ames test, micro-nucleus test and analysis of testis chromosome aberration between the ex-perimental groups and the control group. Mutagenicity was not discovered. The study indicates that phycobiliprotein is a safe promising natural edible pigment.
