A Study of Polyunsaturated Fatty Acid in the Anchory Oil

Abstract: Three kinds of technological manipulations in low temperature-sodium salt alcohol method for concentrating and purifying polyunsaturated fatty acids of DHA and EPA were investigated in the present paper.It is suggested that two saponification and low temperature were of some advantages for a lower cost and higher yield.The study showed that autoxidation of unsaturated lipids could be retarded or inhibited in the presene of EDTA which acted to inhibit the lipid oxidation by chelating prooxidant metal ions.
